2 cups chocolate shell-shaped cereal or almond-shaped cereal pieces
1 tablespoon powdered sugar, for dusting
Instructions
In a large mixing bowl, combine the finely crushed chocolate cookie crumbs with the softened dairy-free cream cheese, cocoa powder, and alcohol-free vanilla extract. Use a sturdy spoon or your hands to mix until a thick, pliable dough forms that holds its shape when squeezed. If the mixture feels too dry, add an extra tablespoon of cream cheese, or if it is too sticky, add more cookie crumbs.
Scoop out about two tablespoons of the mixture at a time and roll it into a ball. Gently pinch and pull one end of the ball to create a tapered teardrop or cone shape that resembles the core of a pine cone. Place each shaped base onto a parchment-lined baking sheet and let them sit for a few minutes to firm up slightly so they are easier to work with.
Starting at the bottom wider end of the cone, gently press individual pieces of cereal into the dough at a slight upward angle. Work your way up in staggered rows, overlapping the cereal pieces slightly as you move toward the pointed top. This layering technique is what gives the treat its realistic, scaly appearance that looks just like a pine cone found in the woods.
Once all the cereal scales are in place, lightly sift powdered sugar over the top of each truffle to mimic a fresh dusting of winter snow. This adds a beautiful holiday flair and hides any small imperfections in the assembly. Place the finished truffles in the refrigerator for at least thirty minutes to allow them to set completely before serving.
