Pomegranate-Glazed Christmas Ribs

Pomegranate-Glazed Christmas Ribs

  • Total Time: 3 hours 20 minutes

Ingredients

  • 2 racks of beef back ribs
  • 1 cup pomegranate juice, unsweetened
  • 1/2 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh pomegranate arils for garnish
  • Fresh rosemary or parsley for garnish

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Remove the membrane from the back of the ribs if it is still attached, then pat the meat dry with paper towels. Season both sides generously with salt, black pepper, and smoked paprika, pressing the spices into the meat to ensure they stick during the long roasting process.
  2. Wrap each rack of ribs tightly in a double layer of heavy-duty aluminum foil to trap the moisture. Place the foil packets on a large baking sheet and roast in the oven for about 2.5 to 3 hours. You want the meat to be tender and starting to pull away from the bone, but not completely falling apart yet.
  3. While the ribs are in the oven, combine the pomegranate juice, brown sugar, apple cider vinegar, minced garlic, and ground ginger in a small saucepan. Bring the mixture to a simmer over medium heat. Let it bubble gently for 15 to 20 minutes, stirring occasionally, until it reduces into a thick, syrupy glaze that coats the back of a spoon.
  4. Carefully open the foil packets and drain any excess liquid from the ribs. Increase the oven temperature to 400 degrees Fahrenheit or turn on the broiler. Brush a thick layer of the pomegranate glaze over the top of the ribs. Return them to the oven for 5 to 10 minutes, watching closely, until the glaze is bubbling and slightly charred in spots.
  5. Remove the ribs from the oven and let them rest for at least 10 minutes. This allows the juices to redistribute and the glaze to set into a sticky finish. Before serving, sprinkle with fresh pomegranate arils and chopped herbs for a vibrant Christmas look that will wow your guests.
