Christmas Funfetti Popcorn

Christmas Funfetti Popcorn

  • Total Time: 15 minutes

Ingredients

  • 10 cups popped popcorn, plain or lightly salted
  • 12 ounces white chocolate chips or white melting wafers
  • 1 teaspoon alcohol-free vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1/3 cup red and green holiday sprinkles
  • 1/2 cup mini pretzels (optional for extra crunch)

Instructions

  1. Start by popping your popcorn using your preferred method, whether it is air-popped, stovetop, or a plain microwave variety. Spread the popped corn out onto a large baking sheet lined with parchment paper or a silicone mat. Be sure to sift through the kernels and remove any unpopped ones so no one gets a surprise crunch later on.
  2. Place your white chocolate chips or melting wafers into a microwave-safe bowl. Heat them in 30-second intervals, stirring well between each session, until the chocolate is completely smooth and liquid. Once melted, stir in the alcohol-free vanilla extract and the salt until fully incorporated.
  3. Slowly pour the melted white chocolate over the spread-out popcorn on the baking sheet. Use a rubber spatula or two large spoons to gently toss the popcorn so that every piece is lightly coated in the white chocolate. Work quickly before the chocolate begins to set.
  4. While the chocolate is still wet, generously scatter the red and green sprinkles over the popcorn. If you are using pretzels or other candies, add them now so they stick to the chocolate. Gently toss one more time to ensure the decorations are distributed evenly throughout the batch.
  5. Let the popcorn sit at room temperature for about 20 to 30 minutes until the chocolate has hardened completely. If you are in a rush, you can place the baking sheet in the refrigerator for about 10 minutes. Once set, break the popcorn into clumps and serve.
