2 packages (5.2 oz each) Boursin Garlic & Fine Herbs cheese
1/2 cup fresh curly parsley, very finely chopped
1/4 cup pomegranate seeds
1 thick pretzel rod or a large sturdy cracker (for the trunk)
1 small slice of yellow bell pepper or a piece of cheddar cheese (for the star)
Assorted crackers and fresh vegetable sticks for serving
Instructions
Remove the cheese from the refrigerator and let it sit at room temperature for about five to ten minutes so it becomes slightly more pliable. Place the cheese onto a large piece of plastic wrap. Use your hands to press the cheese together and mold it into a cone shape, resembling a Christmas tree. Smooth out the sides as much as possible.
Wash the fresh parsley and dry it thoroughly with a paper towel. It is important that the herbs are dry so they do not make the cheese soggy. Finely chop the parsley until it looks like small flakes of greenery. Spread the chopped herbs out on a flat plate or a clean cutting board.
Carefully pick up your cheese cone or roll it across the plate of chopped parsley. Gently press the herbs into the cheese until the entire surface is covered in green. This creates the appearance of pine needles. Once covered, place the cone upright on your serving platter.
Take your pomegranate seeds and gently press them into the sides of the herb-covered cheese cone. Space them out randomly to look like ornaments on a Christmas tree. If you have extra herbs, you can sprinkle a few more around the base of the tree to hide the bottom edge.
Snap a small piece off a pretzel rod and insert it into the bottom of the cheese cone to act as the trunk. Using a small star-shaped cookie cutter or a sharp knife, cut a star out of a slice of yellow bell pepper or cheese. Secure the star to the top of the tree using a toothpick or by pressing it directly into the cheese.
